Deep down a narrow staircase is our historical wine cellar. Here our wines can mature in perfect climatic conditions before they're bottled.
In this cellar you will find our noble Riesling wines. This is also home to our traditional barrels named Fuder. Made from oak, these have a capacity of 1,000 litres. These barrels do not impart an oak flavour to the wines as you would find with modern barriques, but instead provide a subtile microoxidation which gives the wine structure.
All our wines undergo slow, temperature controlled fermentation, spending extended time on lees to develop complexity and ageing-potential.
Modern cellar technology: yes, high tech: no. As a top vineyard we produce our wines in a traditional manner. In every phase of the wine production, we take care to preserve the unique expression of the grape - from vineyard to bottle.
The quality of our wines originates in the vineyard. To ensure the purest expression of the fruit we focus on gentle pressing, wild fermentation and minimum additives to the wine. We aim to work in harmony with the land and reject the use of excessive chemicals in the vineyard.
We use the highest-quality natural cork for our top wines and our young, fruity Rieslings are stoppered with rotary fasteners to preserve maximum freshness and quality.
