Cellar

A narrow staircase leads deep down into our old vaulted cellar. Here our wines can mature in peace before they are bottled.

To ensure that our fine Riesling wines show perfection in the glass, some of them are stored in the traditional “Fuder”. These are the region’s typical oak barrels, each with a volume of 1,000 liters. These barrels do not impart any wood flavor to the wine, but shape it through micro-oxidation. In addition to these wooden barrels, there are also stainless steel tanks – ideal for the development of particularly fruity and fresh wines.

All our wines ferment cool and slowly after an appropriate fermentation period. They remain in contact with the fine yeast for a long time, often even several months. This means that many of the aromas are retained and can be further developed.

Modern Cellar Technology: Yes; High-Tech: No. As a top winery, we produce our wines in the traditional way. In every phase of wine-making, we rely on authentic and extremely gentle processing. Behind this, is the tireless effort to accompany the grapes as authentically as possible from the vineyard to the bottle.

The quality cannot be increased in the cellar, as it is created in the vineyard, but it can be refined! We only produce spontaneously fermented wines from the best grapes. We do not use sweet reserves or pure yeasts to enhance aromas.

We use natural corks of the highest quality for wines with storage and aging potential. For the uncomplicated wines, which are usually consumed fresh, we offer high-quality and aesthetically pleasing screw caps.
